Extremely happy to write this review because of the great experience we had here, and for what this owner / restaurant is doing for the community.
Looking from the outside as you drive through the neighborhood it is easy to assume that you are driving past another shady dive bar, and to proceed with your night without giving a second off further thought to stop in. You could not be more wrong.
We dined here Friday evening, and couldn’t be more pleased with our decision. We read the reviews online and looked at the photos and decided to give it a try in the name of good local BBQ, and we found a new top 10 restaurant experience to put on our list. Stepping through the door you instantly scan the room and take in the space; the warm greeting from the staff, the one hundred plus bourbons around the room, and the hours of work with the woodworking from floor to ceiling. We felt like we were welcome friends who had dined here hundreds of times even though we had never been here before.
We took a few minutes to go over the extensive drink menu, and once we settled on two good options we set to trying to make up our minds on which homemade BBQ we would try out. The waitress Heather made some suggestions, and we ultimately opted for a brisket dinner, and a smoked and loaded bologna sandwich. It is safe to say neither disappointed, and both were eaten almost as fast as they appeared. As a self proclaimed BBQ enthusiast, I ordered my brisket with sauce on the side so I could take in the smoke and wood flavors from the cooking process. This was genuine hand smoked meat, low and slow, pink smoke ring and peppery bark exterior- big thumbs up.
During our meal the owner came over to introduce himself, and tell us his story- you could hear in his voice the passion he has for his craft, and for fine bourbons. It was wonderful to hear how he prepares the meats, and some stories on how he curated the selection of bourbons that were available.
Ultimately we left after a much longer stay than we planned- filled with good food, tasty bourbon, and a new favorite spot to see a new friend that shares a passion for bbq and bourbon, but most importantly vision. At any point along the way corners could have been cut with the renovations inside, the menu, the bar, but he chose not to. He chose to open in a neighborhood that most people extract money from with poorly run businesses and predatory practices. He chose to open a quality restaurant, invest in the neighborhood and share his passions. A big hat tip to that; we will be back many times, with more people to support you.

It's our first time in Buffalo and we stumbled across this Tavern looking for a Bison burger. We had an amazing time with Heather and Daniel. They recommended great food, great drink, and great advice in enjoying Buffalo for the first time. They took really good care of us and went above and beyond. We had the bison burger and smoked wings. Both tasted great! 10/10 would recommend.

This is beyond a hidden gem!! Not only were we overly welcomed..but the food the food is beyond is beyond amazing..Tuesday is their 1$ wing night..Smoked or Classic..The owner of this fine establishment came over to our table to welcome us..and said "welcome home"..which was amazing..I myself have been a restaurant manager for over 25 years and this experience was beyond amazing! The server/bartender Trevor was again beyond accommodating and overly welcoming! Their smoked brisket and wings were so delicious!! We will definitely be back!! Thank you again..I couldn't remember the owners name( I apologize)..but again..because of Trevor and the owner, we will be back!! - Kevin

This was our first time visiting Roaming Bison Tavern and we had an amazing experience! From the moment we walked in, we felt welcomed. The owner even came out personally to greet us and thank us for stopping by, which made the experience even more special. 🥰🩵
The barbecue was absolutely delicious, tender, flavorful, and cooked to perfection😋 The sides were just as good, and you can tell everything is made with care. The atmosphere was warm and inviting, making it a great spot to enjoy a meal. We ordered the Pit Master and the RBT Sampler—they did not disappoint 👌🏽🔥
We’ll definitely be coming back. Highly recommend if you’re looking for great barbecue and excellent hospitality!

Absolutely amazing BBQ. Worth the drive from Lancaster. Wings, brisket, and pulled pork were phenomenal, but the ribs.. crazy good. Ask for extra sauce. The blueberry bourbon sauce is killer. Price was amazing for the amount of food. - Matthew G.

“Unbelievable. I took my girlfriend here on Valentines Day. Before we went I read all these reviews about how awesome the owner was, but didn’t think too much into it. I quickly realized that the rumors were true. This dude was serving, bartending, food running and still making time to ensure that all of his customers were happy. Not to mention he was the only one there. The food was ridiculous, we got a Mac and cheese rice ball to start. She ordered a pulled pork grilled cheese and I got a Ruben burger. Absolutely delicious and the owner is awesome.”

"The owner, Greg, takes great pride and care in everything they serve. From whiskey to wings, it's all done with high quality ingredients. The Kentucky Bourbon fries are out of this world. Trust, just order them. I can make a meal out of them... but would much rather split them with a few others so I can enjoy something else from the menu."

"The RBT is without a doubt my favorite new restaurant on Hertel. After two trips and two servings of BBQ, I feel I can finally sing the praises of what is hopefully a new Buffalo staple! The owner Greg really goes out of his way to make sure you feel at home and get top notch service. He's extremely knowledgeable about both BBQ and the fine bourbon selection behind the bar. The food is great too, every time we've been everyone at our table has really enjoyed their meal. My wife and I really had a nice time here and we will certainly be back in the future!"

Among the hits devoured by our party: the loaded fries, the Ruben, the burger, and the pickles were so good some of the friends got an order to take home. Staff is excellent. A very good place to spend an evening. Highly recommend."

And a great knowledge of the great variety of blends of whiskey, particularly bourbon. Great atmosphere and the employees provide excellent service and personality. Bourbon specialist. No games. No lotto. This owner wants to be a DESTINATION.

"First impressions - this place is fantastic. Aesthetic is classic tavern style, music was big band/swing, not obnoxious pop music you'll get at other restaurants of the same style. Service was super friendly and knowledgeable about the booze and food. Ordered the smoked bourbon wings, fresh cut fries and a Ruben sandwich. Wings were crispy outside, juicy inside. Bourbon sauce was savory, sweet and full of flavor. Fries were excellently seasoned. My girlfriend loved the Ruben, said it was clearly freshly made to order, on marble rye bread. Good variety of unique beer on tap, will try the bourbon flight next time. This place is stellar!!! "

The bourbon selection is enormous and the food was over the top excellent! Our group had three appetizers; smoked wings, smothered fries and the mac’ncheese balls. Wow! That was before the amazing bison burger and the delicious Nashville chicken sandwich! If good food in a casual environment is your thing, go here!"
